Did you tune in to 'Perfect' on the Good Food Channel on Sky 249 last night at 7pm? If you missed me on 'Perfect Fish Suppers', I created a gorgeous mussel dish, with chunky chips and spiced mayonnaise, and a great Salmon dish with ratatouille.

Well we've finally seen the back of the snow and the ice, but we won't be completely shocked if we see it back before winters end! Hi, I’m Simon, Hotel Manager here at the spectacular Rockliffe Hall. Originally from Bath – home of rugby, cider, and Romans, I have been involved in hospitality for last 25 plus years. It is great to be working within this five star resort in the North East of England, and with the highest quality standard of service and a wide range of top quality product offerings from overnight stays to golf days, Rockliffe Hall really is a five star home from home.

Welcome to my blog from myself and all of the Fitness staff at Rockliffe Hall. As Fitness Co-ordinator my main role is to assist with the development and operation of all fitness and wellness initiatives including classes. This involves helping to plan and organize wellness events and services for the benefit of the members and guests. My role also involves diagnosing and delivering rehabilitation strategies for individuals suffering from injuries or requiring injury prevention measures.

I have been part of the Rockliffe Hall team since way back in 2009 where I started out as a Chef de Rang in the Orangery with Kenny Atkinson. This is where I started to learn all manner of new things including my new found speciality in cheese... My career has so far spanned just over a decade in hospitality where I found myself working in other hotels in the north east and just before joining the Rockliffe team a 2 year stint on the Cruise Lines. Now world travelled I find myself back in the North East in this very fine resort and blogging for you all.

As jobs go, it doesn’t get much better than being the Golf Director here at Rockliffe Hall! The course and Clubhouse are both fantastic and the positive feedback I get on a daily basis, makes all the hard work worthwhile. When I first visited the site back in the summer of 2008, it was clear that Rockliffe Hall was going to be a very special place and as the development progressed, I was not disappointed.

Rockliffe Hall is celebrating its most recent award, this time from its toughest critics…the guests! Our five star luxury resort in Hurworth near Darlington has been placed second in the list of the UK's most luxurious hotel destinations by popular review website TripAdvisor.
