Rockliffe Hall’s Christmas Pudding

Home-made Christmas pud- what could be better!

With Christmas just around the corner, you might want to have a practice to get it just right- and really impress family and friends whether it’s for Christmas Day itself on one of the many other celebrations you might be holding or attending.

Home-made Christmas pudding could also make a great gift to take if you’re invited to a party over the festive season- a little net or muslin bag decorated with red and gold ribbons will make the pud a lovely pressie for your host!

I have created this delicious Christmas Pudding recipe especially for those of you who wish to create your own pudding at home and really impress your guests this year! For those of you who don’t fancy giving my recipe a go, you can also purchase your Christmas Pudding from Rockliffe Hall this year.

If you do decide to give my recipe a go, you should have plenty of time to perfect the recipe and to create the pudding without having to rush around on Christmas Eve!

Rockliffe Hall’s Christmas Pudding recipe
Makes 8 x 1lb puddings

Ingredients

• 1lb fresh breadcrumbs

• 1lb suet

• 1lb brown sugar

• 1lb raisins

• 1lb sultanas

• 1lb currants

• 4ozs mixed peel

• 1lb cooking apples

• 2 tsp mixed spice

• 4oz plain flour

• 6 eggs

• 1pint of Guinness

• 1 lemon juice and rind

• 1 orange juice and rind

Method

• Mix all dry ingredients

• Add the liquid ingredients and mix well, adding the flour

• Cook for 8 hours

• Steam when ready to serve
